Sweet Teriyaki Chicken Lettuce Wraps
Ingredients:
*1 head of iceberg lettuce,
*1 1/2 lbs skinless, boneless chicken breast,
*1 cup chopped green onion,
*1 bell pepper,
*1/2 cup diced water chestnuts, 1/2 cup & 1 tbsp low sodium Teriyaki sauce,
*3 tbsps sweet chili sauce,
*2 tbsps olive oil
-Dice chicken up into pieces.
-Chop up peppers, onion, carrots, and water chestnuts.
–Add the vegetables to a frying pan on high heat with 2 tablespoons of olive oil.
-Add 1/4 cup of Teriyaki to the vegetables. Turn the heat to medium and let them simmer for ten minutes.
-Keep the heat on medium. Add the chicken to the pan.
-Add another 1/4 cup of Teriyaki sauce to the pan, cover and let the chicken cook slowly.
-When the chicken is fully cooked, drain the extra juices.
-Mix in 1 more tablespoon of the Teriyaki sauce and three tablespoons of sweet chili sauce.
-Add a 1/2 cup to the lettuce wrap! I served my lettuce wraps with brown rice and steamed broccoli!
