Recipe of the week 1/18/12

Cheese-Stuffed Chicken Breasts
4 Servings
Small bowl
Ovenproof skillet
½ cup shredded Gouda cheese
2 tablespoons chopped scallions
1 tablespoon sliced pimientos, chopped
1 teaspoon paprika
4 small boneless, skinless chicken breasts
½ teaspoon salt
½ teaspoon pepper
1 tablespoon olive oil
Preheat oven to 400 degrees. Combine cheese, scallions, pimientos, and ½ teaspoon paprika in a small bowl. Cut chicken breasts nearly through to the opposite side and open flat. Sprinkle the breasts with salt and pepper and fill each breast with even amounts of cheese filling. Close chicken breasts and press edges together. Sprinkle with remaining paprika and additional salt and pepper.
Heat oil over medium heat in large ovenproof skillet. Cook chicken in skillet until one side is browned. Flip chicken breasts and transfer to the oven for 15 minutes or until cooked thoroughly.
