Recipe of the Week — Southwestern Cheese Panini

Serves 4 People 

Equipment:

Knife and cutting board

2 skillets/frying pans

Ingredients:

Shredded sharp cheddar cheese

1 cup shredded zucchini

½ cup shredded carrot

¼ cup chopped red onion

¼ cup salsa

Jalapeno peppers, chopped (optional and to taste)

8 slices whole-wheat bread

2 teaspoons canola/vegetable oil

Directions:

Finely shred or chop your vegetables ahead of time.  Then, evenly layer four of the slices of whole-wheat bread with the cheese, zucchini, carrot, onion, salsa and jalapeno peppers.  Top with remaining bread.  Heat half of the oil in your skillet over medium heat.  Place two of the paninis in the pan and place the second skillet on top (to seal in the heat and press the sandwich).  Cook until golden brown (about two minutes), then flip and cook the other side.  Repeat with the remaining oil and last two sandwiches.  Enjoy!
