Recipe of the Week – Creamy Broccoli Soup

Creamy Broccoli Soup

Serves 6 People


Large pot


3 Tablespoons olive oil

4 shallots, peeled and sliced

1 ½ lbs. broccoli florets, chopped

4 cups vegetable or chicken broth

12 ounces mascarpone cheese

Salt and pepper, if desired


Heat oil in a large pot over medium heat, then add the shallots and cook 3-4 minutes.  Add broccoli and salt and pepper to taste.  Add the broth and bring to a boil.  Reduce heat, cover, and simmer 10-15 minutes (until broccoli is tender).

Cool 5 minutes, then add in small batches to blender and blend until smooth. (If you don’t have a blender, you can use a potato masher to break up the broccoli, though the soup won’t be as smooth. Finally, add mascarpone cheese, mix, and enjoy!
